Boil the veggies till they are cooked half with some salt and keep aside.
Grind the items given under “For paste” to fine paste adding some water and keep aside.
Heat a pan with oil and add the items given for seasoning one by one. Fry the onions for a minute. Add the boiled veggies and mix.
Now add the paste and stir well till the raw smell goes in medium flame. Pour in the thin coconut milk and a cup of water. Wait till the veggies become soft.
Check out for salt and if needed add. Finally pour in the thick milk, give few fast stirs and switch off the stove.
