For Kurma paste
Wash the veggies and cut them to dices. Boil them adding some salt and keep aside. (except onion and tomato)
Heat a pan and dry roast all the items given under Kurma paste except coconut till they become hot and add them with coconut and grind to fine paste with water and keep aside.
Heat oil and ghee in a pan. Throw in the cumin and bay leaf. After it sputters add the onions and fry well till they become tender. Now fry the tomatoes till it gets pulpy. Add the ginger garlic paste and stir well.
Add all the powders like turmeric powder, red chilli powder and coriander powder and stir well. Now add the curd to it and mix well. Transfer the boiled vegetables. Let them boil for sometime.
Add the coconut paste and required salt for the gravy and mix well. When the stuff thickens pour in 1 cup of water and switch off the stove when it comes to gravy consistency.
Garnish with Coriander leaf.
