Step1
Heat a large saute pan on medium- high heat and pour in the oil.
Step2
Add the chopped tomatoes and onions and saute well for 2-3 minutes. Add the spice powders and saute for one minute.

Pour in the beaten eggs and mix continuously until the egg is scrambled and cooked through, about 1 minute.
Step4
Turn off the heat and salt the dish as needed.
Step5
Serve garnished with Coriander leaves, if desired.
Step6
This makes an excellent sandwich filling for buttered white bread or chapathi.
