Step1
In a large saucepan, bring the water, ghee and salt to boil.

Add the rice flour all at once & turn off the heat. Mix well using a sturdy spoon. It should be a soft, non – sticky dough. If it is sticky, add a bit more of flour & mix it in. Cover & set it aside till it is warm to touch.

Mix the grated coconut, jaggery & cardamom powder with your fingers till it is mixed uniformly, about 1 minute. Divide it into 12 portions.
Step4
Once the dough is warm to the touch, gently knead it well & divide it into 12 portions. Form them into smooth balls & fill them with a portion of coconut filling.
Steam the kozhukattas on high flame for 10 minutes. Serve warm or at room temperature.
