Masala Powder To Grind
Dry roast the ingredients given under masala powder separately in a pan and grind it to a fine powder.
Chop the brinjals into slices. In a pan, add some oil and roast the brinjals in a bit of salt and ¼ tsp of turmeric powder. Roast until it is brown and set aside.
When it cools, mix it with the grounded masala powder.
Heat oil in a deep pan. When the oil is hot, add mustard seeds and cinnamon sticks. Add sliced onions and curry leaves to the pan. Stir till onions turn golden brown.
Add the roasted brinjals coated in masala powder to the pan. Stir well.
Add the remaining turmeric powder, required salt and 1 cup of water to the pan. Stir gently until a slight gravy is formed. Cover with a lid, reduce heat and cook the brinjals until water evaporates.
Add the rice and mix well. Serve hot.
