Vegetable Stew though is an authentic side dish for Appam, it also goes very well with Idiyappam and Dosa. The fresh spices blended with the coconut milk gives fantastic aroma..

Ingredients

  • Diced vegetables like carrots, beans, potato, cauliflower -2 cups
  • Sliced onions – 2
  • Thin coconut milk – 2 cup
  • Thick coconut milk – 2 tbsp
  • Salt to taste
  • Coconut oil  – 3 tbsp

For Seasoning

  • Cloves – 3
  • Cinnamon stick  – 1 inch
  • Green Cardamom – 1
  • Cumin seeds – 1/2 tsp
  • Thinly chopped ginger – 1 tsp
  • Slitted Green chillies – 2
  • Curry leaves

For Paste

  • Khas Khas / Poppy seeds – 2 tsp
  • Green Chillies – 2
  • Cashew nuts -6
  • Roasted gram – 2 tsp

Preparation

Step 1

Boil the veggies till they are cooked half with some salt and keep aside.

Step 2

Grind the items given under “For paste” to fine paste adding some water and keep aside.

Step 3

Heat a pan with oil and add the items given for seasoning one by one. Fry the onions for a minute. Add the boiled veggies and mix.

Step 4

Now add the paste and stir well till the raw smell goes in medium flame. Pour in the thin coconut milk and a cup of water. Wait till the veggies become soft.

Step 5

Check out for salt and if needed add. Finally pour in the thick milk, give few fast stirs and switch off the stove.
