Ingredients

For Marination

 

  • ½ kg-Brinjal
  • 1 tsp-Kitchen Treasures Ginger Garlic Paste
  • 1 tsp-Kitchen Treasures Fish masala
  • Kudampuli Water
  • Salt

For Policha Masala

 

  • ½ kg-Chopped Onion
  • ½ kg-Shallots
  • (1 small piece) Chopped Ginger
  • 1 tbsp-Chopped Garlic
  • 4-Green Chilli
  • ½ tsp-Kitchen Treasures turmeric
  • ½tsp-Kitchen Treasures pepper powder
  • 4-Tomato Finely chopped
  • 3 tb sp-Kitchen Treasures Fish masala
  • ¼ tsp-Kitchen Treasures Cumin seeds
  • ¼ tsp-Kitchen Treasures Mustard seeds
  • 2 pieces-Cinnamon
  • 2 tb sp Coconut oil
  • 2 leaves-Kudampuli
  • Salt
  • 1 cup-Coconut milk
  • 2 spring-Curry leaves

 

 

Preparation

For Marination

Step1

Marinate Brinjal with a mixture of Kitchen Treasures Ginger Garlic Paste, Kitchen Treasures Fish masala, kudampuli water and a pinch of salt.

 

For Pollicha Masala

 

Step1

Heat the pan and make a paste, by adding 2 tsp. of coconut oil and curry leaves. After cinnamon sticks, cumin seeds and mustard splutters, add ginger, garlic, and green chilli.

 

Step2

 

Sauté Onions and shallots and wait for it to slightly redden to add Kitchen Treasure’s fish masala.

 

Step3

Add Kitchen Treasures’s turmeric powder, and stir well

 

Step4

Add chopped tomatoes and cook till the tomatoes are done.

 

Step5

To this content add Kudampuli water, sprinkle salt, mix and cook well.

 

Step6

And finally add coconut milk, cook it well and wait the content by keeping it aside.

 

Step7

Take a fry pan and add to it 2 tb sp. Of coconut oil, shallow fry the marinated brinjal to cook ¾ upside and down.

 

Step8

Lastly, in a banana leaf spread little pollicha masala over it and place the fried brinjal on top and smear it again with pollicha masala.

 

Step9

Wrap the Banana Leaf and place it over a heated pan with 2 tb sp oil. Cook both the sides well to prepare a delicious brinjal pollicha dish.
