Step 1
Blend the tomatoes in a blender to puree and keep aside.
Step 2
In a pan heat oil and ghee and fry the clove, cinnamon, fennel seeds, bay leaf and cardamom. After frying for a minute fry the sliced onions adding a pinch of salt. Once they turn golden brown, green chillies add ginger garlic paste.
Step 3
After the raw smell of garlic paste goes add the tomato puree. Add chilli powder and mix. Allow it to cook till the oil separates from the ground tomato.
Step 4
Now add cooked rice, required salt and mix gently. Garnish with coriander leaves. Quick Fix Tomato Rice is ready to serve.
