Crush the ginger roughly and add it to a small pot along with water and sugar.
Cook over high heat and bring it to a boil. Let the sugar syrup boil for 5 minutes.
Turn off the heat and let the ginger steep in the syrup for 30 minutes
Strain and leave the syrup to cool completely. Add the lime juice. This syrup can be made ahead and stored in the fridge for a week.
To make the Limeade
In a serving glass, add 2-3 nos. chopped strawberries. Crush it up using the back of a wooden spoon. Pour the ginger-lime syrup to your taste and top it up with cold water or soda. Add ice and serve chilled!
