Step1
Mix the roasted rava with salt and curd, add some water to make a thick batter.Keep aside for 15 mins.

In a pan heat the oil and add mustard seeds and curry leaves, allow them to crackle.

Add the vegetables and stir them for a few minutes.

Add these vegetables to the batter and mix well. Mix in the coriander leaves.

Grease the idli stand with some oil.

Add a pinch of baking soda and a tsp of lemon juice(souring agent) to the batter (to make it fluffy) & mix properly and immediately pour spoonful into the idli stand and sprinkle pepper powder on top.

Steam the idlis. It generally takes 7-8 mins to steam cook. If a toothpick inserted into the idli comes out clean it is ready to eat! You can smear a little ghee on top if desired. Serve hot with chamanthi podi or pickle.
