Pongal is a popular rice dish in Tamil Nadu. The name comes from the root word ‘pongu’ which means “to boil” or “spill over”.

Ingredients

  • 500 gm green gram (split)
  • 500 gm raw rice
  • Ghee as needed
  • Salt to taste
  • 5 gm black peppercorns (whole)
  • 5 gm cumin (whole)
  • 5 gm turmeric powder
  • 10 gm ginger (grated)
  • 2 green chillies
  • 1 sprig curry leaves
  • Oil as needed

Preparation

  • Step1

    Soak the rice in water for 1 hour.

  • Step2

    Add water in a vessel. Mix in the rice and dal together with turmeric and bring to a boil.

  • Step3

    When the rice is cooked, finish the pongal with a tempering of cumin, pepper corn, green chillies, ginger and curry leaves.

  • Step4

    Drizzle with ghee and serve hot.
