Step 1
Mint Chutney – Grind together 1 ½ cup grated coconut along with 10 -12 mint leaves, 3 green chilies. You can add water just to aid the grinding process. Season with salt to taste.
Step 2
Take a slice of bread and butter it generously. Spread a tablespoon or two of the chutney over it.
Step 3
Arrange a few slices of hardboiled eggs over it. Place another buttered slice of bread on top,buttered side up.
Step 4
Arrange a couple of tomatoes and cucumber over it. Cover it with another buttered slice of bread.
Step 5
Trim the edges and cut them into triangles and further cut each triangle into two for mini sandwiches
