Step 1
Pre-heat the oven to 180C and line a cookie sheet with parchment paper.
Step 2
Cream butter and sugar. Add egg and vanilla and beat for 30 seconds. Stir in the dry ingredients and mix till combined.
Step 3
Shape into small balls & when placed on the cookie sheet, flatten with glass dipped in sugar.
Step 4
Bake the cookies for 8-10 mins or till they are almost firm to touch.
Step 5
Let them cool completely on the tin. They will harden as they cool.
