Zest the lime and mix it with a pinch or two of granulated sugar and keep it aside.
In a saucepan on medium-high heat, combine heavy cream and 1/4 -1 /2 cup granulated sugar, depending on your taste and cook stirring till they start to steam.
Do not let it boil, just cook it till the sugar is melted and the cream is very hot. Take it off the heat and add the lime juice. Stir well and set aside for 5 minutes.
Strain the pudding mixture and divide them among the bowls and let it set in the fridge for 2-3 hours. Top it with the zest and serve.
