Kozhukatta, the delicious rice dumpling filled with grated coconut & jaggery is the favourite among all. An easy breakfast and snack dish.

Ingredients

  • Fine rice flour (Pathiri / Appam podi) -1 1/2 cup
  • Water – 1 3/4 cup
  • Ghee – 1 tsp
  • A pinch of salt
  • Grated coconut – 1 cup
  • Grated jaggery – 1 3/4 cup
  • A pinch of cardamom powder (optional)

Preparation

Step1

In a large saucepan, bring the water, ghee and salt to boil.

Step2

Add the rice flour all at once & turn off the heat. Mix well using a sturdy spoon. It should be a soft, non – sticky dough. If it is sticky, add a bit more of flour & mix it in. Cover & set it aside till it is warm to touch.

Step3

Mix the grated coconut, jaggery & cardamom powder with your fingers till it is mixed uniformly, about 1 minute. Divide it into 12 portions.

Step4

Once the dough is warm to the touch, gently knead it well & divide it into 12 portions. Form them into smooth balls & fill them with a portion of coconut filling.

Steam the kozhukattas on high flame for 10 minutes. Serve warm or at room temperature.
