Ingredients

  • 8 – Purple Brinjals
  • 2 Cups – Cooked rice
  • 1 – Onion
  • 2 Sticks – Curry leaves
  • 1/2 tsp – Kitchen Treasures Turmeric powder
  • 2 – Cinnamon pieces
  • 1 tsp – Kitchen Treasures Mustard seeds
  • 4 tbsp – Oil

 

Masala Powder To Grind

 

  • 4 tbsp – Coconut (grated)
  • 2 tbsp – Channa Dal
  • 3 – 4 – Kitchen Treasures Whole red chilli
  • 2 tbsp – Kitchen Treasures Coriander Powder
  • 1/2 tsp – Kitchen Treasures Cumin seeds
  • 1/2 tsp – Kitchen Treasures Black pepper
  • 1/2 tsp – Kitchen Treasures Fennel seeds
  • A pinch – Kitchen Treasures Fenugreek seeds
  • Salt (to taste)

Preparation

Step1

Dry roast the ingredients given under masala powder separately in a pan and grind it to a fine powder.

 

Step2

Chop the brinjals into slices. In a pan, add some oil and roast the brinjals in a bit of salt and ¼ tsp of turmeric powder. Roast until it is brown and set aside.

 

Step3

When it cools, mix it with the grounded masala powder.

 

Step4

Heat oil in a deep pan. When the oil is hot, add mustard seeds and cinnamon sticks. Add sliced onions and curry leaves to the pan. Stir till onions turn golden brown.

 

Step5

Add the roasted brinjals coated in masala powder to the pan. Stir well.

 

Step6

Add the remaining turmeric powder, required salt and 1 cup of water to the pan. Stir gently until a slight gravy is formed. Cover with a lid, reduce heat and cook the brinjals until water evaporates.

 

Step7

Add the rice and mix well. Serve hot.
