Kalan is a traditional Kerala dish that’s prepared with yogurt and coconut. It’s a side dish for rice and also served as part of the Onam sadhya.

Ingredients

  • 1 raw banana  (peeled and cut into inch-thick slices)
  • 1/4 tsp turmeric powder
  • 4 green chillies (slit)
  • 1 tsp ginger (chopped)
  • 1 tsp garlic (sliced)
  • 1 tbsp shallots (sliced)
  • Salt to taste

For grinding:

  • 1/2 tbsp coconut (grated)
  • 1 tsp cumin
  •  3 cloves garlic
  • 1/2 cup yogurt
  • 1/4 tsp turmeric powder

For tempering:

  • 2 tbsp coconut oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 5 shallots (sliced)
  • 2 dry red chillies
  • 1 sprig of curry leaves

Preparation

  • Step1

    Boil the raw banana in water with  a pinch of salt and turmeric powder. Grind the ingredients mentioned under ‘grinding’ into a paste.

  • Step2

    Drain the banana and set aside. In a separate vessel, add the banana pieces along with the remaining ingredients and stir for 5 minutes.

  • Step3

    Sauté the ground paste in a separate vessel with a little coconut oil and mix with yogurt.

  • Step4

    Add this mixture to the cooked banana and let it boil till thickens. Remove from the fire.

  • Step5

    Splutter the ingredients given for tempering in a bit of hot oil. Saute for 10 seconds and sprinkle over the kalan.
