For Main Recipe
Heat a pan with 3 tsp of oil. Add the onion & green chilli & fry till the color of the stuff changes & add the cashews.
Add the tomatoes to it and fry till it becomes mushy. Allow them to cool down. Grind to paste & keep aside.
Wash the mushrooms in running water. Wipe them well with a neat cloth or a kitchen towel. Remove the stem & cut them to pods & keep aside.
Heat a pan with oil & butter. Saute it with cumin seeds. Once they splutter, add the onions & fry till they become golden brown. Now add the crushed spices, ginger garlic paste, garam masala & all powders mentioned & stir well.
Pour the paste into it & keep stirring till the oil separates. Add the capsicum & mushroom to it & mix well. Add required salt & keep stirring. Pour 2 cups of water & wait till the gravy thickens.
Finally add crushed kasuri methi, give a stir & switch off the stove. You can enjoy the dish with Indian bread or Steamed rice.
