Step 1
In a bowl add potato, cauliflower florets, beans, peas and carrots, sprinkle some salt and steam them out for 15 minutes or till they are half boiled and keep aside.
Step 2
In a wok heat 2 teaspoons of oil and 1 tablespoon of butter. Fry onions, ginger, green chillies and tomatoes till the tomatoes become mushy. Blend the stuff in a mixer and keep aside.
Step 3
Heat a pan with remaining oil and butter. Splutter some cumins in it. Add the bell peppers and sauté for a minute. Pour in the blended paste and stir for 1 minute. Now add all the given powders and required salt.
Step 4
Fry in medium flame till the oil separates. Add the boiled veggies and half cup of water. Close the pan with a lid and in medium flame cook for 10 minutes.
Step 5
Finally add the Paneer cubes and cook for 5 more minutes in low flame. Now switch off the stove and serve after garnishing with coriander leaves.
