In a large pan, heat the oil and pop the mustard seeds.
Add the remaining ingredients and mix well. Cover and cook on medium high heat till the cauliflower is almost cooked.
Open the lid and cook till the cauliflower is fully cooked. The onions should caramelize and the cauliflower should get little brown spots here and there.
Adjust seasonings to taste and serve hot with rice.
