Ingredients

  • Grated beetroot- 1 cup
  • Green chillies slitted – 2 nos
  • Thick curd – 1 cup
  • Water – 1/2 cup
  • Ginger thinly sliced – 1 inch piece
  • Mustard seeds – 1 tsp
  • Coconut oil – 2 tsp
  • Few curry leaves

Preparation

Step1

In a pan, heat the oil and pop the mustard seeds.

Step2

Add the beetroot, ginger, green chilies, curry leaves and salt and cook over medium high heat for 3-4 minutes stirring often until it turns dry.

Step3

In the meantime, whisk curd and water together.

Step4

Once the beetroot is done cooking, add it to the curd and mix well. Serve with rice.
