Ingredients

  • ½ cup – tuvar dal
  • 3 cups – water
  • 11/2 tsp – Kitchen Treasures Turmeric Powder
  • ½ tsp – oil
  • 2 – drumsticks (chopped)
  • 250 grams – white pumpkin (chopped)
  • 4- ladies finger (chopped)
  • 1 – carrot (chopped)
  • 1 –Onion (chopped)
  • 2- Tomatoes (chopped)
  • 2 tbsp – sesame oil
  • 1 tsp – Kitchen Treasures Mustard seeds
  • 2 tbsp – Kitchen Treasures Sambhar Powder
  • 2 – Kitchen Treasures Whole Dry Red Chilie
  • 1 sprig – Curry leaves
  • A pinch – asafoetida
  • Salt to taste
  • 1.5 tbsp – tamarind
  • ½ cup – hot water

Preparation

Step1

Rinse tuvar dal and add them in the pressure cooker. Add ¼ tsp turmeric powder and 2 cups water. Stir well and pressure cook it for 8 to 9 whistles.

 

Step2 

When the pressure settles down on its own, open the lid of the cooker and mash the dal with a wired whisk or spoon.

 

Step3

In a small bowl take ½ cup hot water and 1.5 tbsp tightly packed tamarind. Soak them in hot water for about 20 to 30 minutes. Squeeze the pulp from the tamarind in a bowl. Keep it aside.

 

Step4

Heat 2 tbsp sesame oil in a pan. Add 1 tsp mustard seeds and let them crackle. Add 2 dry red chilies and a pinch of asafoetida. Stir till the red chilies change color.

 

Step5

Add 1 sprig curry leaves and onions and then sauté them with curry leaves till they turn translucent. Add the veggies and stir very well. Add the tamarind pulp and ¼ tsp turmeric powder to the veggies. Stir well.

 

Step6

Add 1 cup water, salt. Cover the pan and simmer on a medium to high flame till the veggies are cooked.

 

Step7

Add the mashed dal and the sambar masala. Stir very well and simmer more for 4 to 5 minutes on a medium to high flame.

 

Step8

Serve tasty arachuvitta sambar with Onasadya.
